When it comes to cakes i like simplicity. You can win me over with a great Madeira or carrot cake. I make my cakes in a loaf tin because i usually eat them alone and this minimises waste. I use a cheat cream cheese frosting recipe you can find here 

What You'll Need - Makes 1 loaf & 2 extra muffins 

  • 2 Cups Flour 
  • 1 Tsp Baking Powder
  • 180g Butter/ Margarine 
  • 2 Eggs 
  • 1 Cup Castor Sugar 
  • Zest 1 Lemon 
  • Juice 2 Lemons 
  • 3/4 Cups Desiccated Coconut & Extra for decorating
  • 1/4 Cup Milk 

Prep - 15 Minutes 

  • Preheat oven at 180 degrees 
  • Cream butter and sugar by whisking them together until combines and creamy 
  • Add the eggs one at a time until combined 
  • Add the zest of 1 lemon and the juice of lemons and combine 
  • Add the desiccated coconut and combine
  • Sift the flour into the bowl and combine adding milk to loosen the batter. Add more milk if needed to make a thick batter
  • Grease a loaf tin and pour into it the batter 3/4 full. 
  • I bake the leftover batter in teacups

Let's Get Cooking - 40 Minutes

  • Place in the preheated oven and bake for about 40 minutes. Pierce the center of the cake to check if its cooked through
  • Allow cake to cool down completely
  • Spread the cream cheese frosting over the cake and sprinkle over desiccated coconut. Toast some in a dry pan and add onto the cake
