One pot breakfasts are such a quick and easy way to feed the masses. 

What You'll Need - Serves 2 

  • 2 Large Cooked Potatoes
  • 4 Beef or Pork Cocktail Sausage 
  • 1 Tomato
  • 1/2 Onion 
  • 2 Garlic Cloves 
  • 4 Eggs 
  • 6 Button Mushrooms
  • 4 Rashers of Streaky Bacon
  • 1 Tsp Dried Oregano
  • 1/2 Tsp Smoked Paprika 
  • Salt & Pepper 
  • Cooking Oil 

Prep: 10 Minutes

  • Heat oil in a pan and fry the sausages until cooked 
  • Cut up the cooked potatoes into chunks 
  • Finely dice your onion and garlic
  • Dice the tomato & mushrooms into chunks 
  • Cut up the streaky bacon into pieces 

Let's Get Cooking - 15 Minutes 

  • In an oven proof pan, heat oil
  • Add the onion, mushroom and garlic and cook until the mushrooms are coked 
  • Add the bacon and cook.
  • Add back the cooked sausages and potatoes and combine
  • Add the diced tomatoes 
  • Season with salt, pepper, paprika and oregano 
  • Combine and cook until the tomatoes are almost cooked 
  • Place the pot aside and open up 4 spaces in the pan to break the eggs into 
  • Break the eggs into the pan. Sprinkle some salt onto the eggs. 
  • Place the pan into the oven and bake for about 5 minutes (until the egg whites are firm but the yolk is still runny) 
  • Serve and enjoy
