This is a basic pancake recipe that you can personalise with things like fruit. If you don’t have buttermilk, simply add a teaspoon of vinegar or lemon juice to milk to make your own.

Ingredients - Serves 2

  • 3/4 Cup All Purpose Flour

  • 1 Tsp Baking Powder

  • 1/4 Tsp Baking Soda

  • 1 Cup Buttermilk

  • 1 Egg

  • 2 Tbs Sugar

  • Pinch of Salt

  • Non Stick Pan

Prep - 10 Minutes

  • Combine the dry ingredients - flour, baking powder, baking soda, sugar and salt

  • Break the egg and beat it. Add the egg and buttermilk to the dry ingredients and combine into a smooth batter

Let’s Get Cooking - 20 Minutes

  • Heat a non stick pan on medium heat.

  • Melt a teaspoon of butter in the pan and take a kitchen paper and wipe the butter.

  • Add about 1/4 cup of the batter into the heated pan and spread into a circle

  • Leave the pancake to cook until you see bubbles forming, flip the pancake and brown the second side (Total cooking time for the pancake is about 5 Minutes)

  • Continue with the remainder of the dough

  • Serve with syrup or honey and some fruit.
