This is a basic pancake recipe that you can personalise with things like fruit. If you don’t have buttermilk, simply add a teaspoon of vinegar or lemon juice to milk to make your own.
Ingredients - Serves 2
3/4 Cup All Purpose Flour
1 Tsp Baking Powder
1/4 Tsp Baking Soda
1 Cup Buttermilk
2 Tbs Sugar
Pinch of Salt
Non Stick Pan
Prep - 10 Minutes
Combine the dry ingredients - flour, baking powder, baking soda, sugar and salt
Break the egg and beat it. Add the egg and buttermilk to the dry ingredients and combine into a smooth batter
Let’s Get Cooking - 20 Minutes
Heat a non stick pan on medium heat.
Melt a teaspoon of butter in the pan and take a kitchen paper and wipe the butter.
Add about 1/4 cup of the batter into the heated pan and spread into a circle
Leave the pancake to cook until you see bubbles forming, flip the pancake and brown the second side (Total cooking time for the pancake is about 5 Minutes)
Continue with the remainder of the dough
Serve with syrup or honey and some fruit.
