Chicken - the true love of my love 😍

I can’t get over how versatile Chicken is and if you’ve noticed, this folder is full of chicken recipes. This recipe is something different and can also be made with chicken breasts.

What You’ll Need - Serves 4

  • 8 Pieces of Chicken (Thighs & Drumsticks)

  • 1 Large Juicy Orange

  • Thumb Size Piece of Ginger

  • 4 Garlic Cloves

  • 2 Red Chilies

  • 1/4 Cup Honey

  • 2 Tbs Soy Sauce

  • 1 Cup White Wine

  • 1 Cup Chicken Stock

  • 8-10 Sprigs of Lemon Thyme (Or Normal Thyme)

  • Salt & Pepper

Prep - 10 Minutes

  • Generously season your chicken pieces with salt and pepper.

  • Peel and lightly crush the garlic cloves

  • Peel and slice the ginger

  • Bruise the chilies (If you don’t like too much heat, you can remove the seeds from the chili)

Let’s Get Cooking - 30 Minutes

  • Heat some cooking oil in a large frying pan with a lid

  • Make sure the pan is very hot and place the chicken pieces skin side down.

  • Fry the chicken pieces until the skin is golden brown. The more colour you can get on your chicken the more flavourful your chicken will be.

  • Once all the chicken has been browned on both sides. Remove them from the pan and set aside.

  • Leave the pan on the stove and add the white wine to deglaze the pan.

  • Reduce the heat on the stove to medium and add the garlic, ginger and chili.

  • Squeeze in the juice of the orange.

  • Add the chicken stock, honey, soy sauce and thyme.

  • Allow the sauce to come to a boil and season with salt & pepper.

  • Add the chicken pieces back to the pan with the skin side up and cover with a lid. Allow to simmer for 20 minutes until the chicken is cooked.

  • Spoon the sauce over the chicken when serving.
