I love spinach and I’m always looking for ways to incorporate it into my meals. This is one of my favourite recipes as it has so many of my favourite things and is so easy to make.
What You’ll Need - Serves 3 - 4
1 Bunch Spinach
200g Cherry Tomatoes
2 Garlic Cloves
Salt & Pepper
Prep - 10 Minutes
Remove the spinach leaves from the stalk and roughly chop them.
Slice the mushrooms and garlic cloves.
Let’s Get Cooking - 15 Minutes
Heat oil in a pan , add mushrooms and garlic. Stir until the mushrooms are cooked.
Add the cherry tomatoes and allow them to start blistering.
Add the spinach and a little bit of water to create some stem. Allow the spinach to wilt and combine.
Season with salt and pepper to taste.
Crumble the feta into the spinach and combine.
