Pineapple salsa works really well for grilled meats or as a dip with some chips. It can also be a great way to use up pineapples that might be going off soon.

What You’ll Need - Serves 4 People

  • 1 Pineapple

  • 1 Red Onion

  • 15g Fresh Coriander

  • 2 Red Chilies

  • 1 Lemon

  • Salt & Pepper

Prep - 15 Minutes

  • Peel and finely dice your pineapple into bite size pieces

  • Finely dice your red onion. Remove the seeds from the chilies and finely dice them (You can keep the chilies if you like more heat)

  • Roll the fresh coriander leaves and stems together up and chop finely.

  • Add all the ingredients into a bowl, season with salt and pepper.

  • Drizzle the juice of the lemon and combine.
