Pineapple salsa works really well for grilled meats or as a dip with some chips. It can also be a great way to use up pineapples that might be going off soon.
What You’ll Need - Serves 4 People
1 Red Onion
15g Fresh Coriander
2 Red Chilies
Salt & Pepper
Prep - 15 Minutes
Peel and finely dice your pineapple into bite size pieces
Finely dice your red onion. Remove the seeds from the chilies and finely dice them (You can keep the chilies if you like more heat)
Roll the fresh coriander leaves and stems together up and chop finely.
Add all the ingredients into a bowl, season with salt and pepper.
Drizzle the juice of the lemon and combine.
