Frittatas are easy and can feed big crowds easily. Perfect for breakfast or light lunch served with a side salad.

What You'll Need - Serves 8

  • 1/2 Onion

  • 6 eggs

  • 1/2 Cup of Milk

    2 Cups Cherry Tomatoes

  • 1 Bunch Spinach

  • 1 Pack Streaky Bacon (250g)

  • 2 cloves Garlic

  • 1 Cup Grated White Cheddar Cheese

  • 2 Tsps Dried Oregano

  • 2 Tsp Paprika

  • Salt & Pepper to taste

Prep - 10 Minutes

  • Preheat your oven to 180 degree

  • Remove the spinach leaves from the stalks and roughly chop.

  • Half the cherry tomatoes and finely dice the onion and garlic.

  • Beat your eggs in a bowl and add the milk. Season with salt and pepper.

  • Grate a cup of Cheddar Cheese

Let's Get Cooking - 30 Minutes

  • In a pan, add vegetable oil cook the bacon until crispy

  • Add the onion and garlic and sauté until cooked

  • Add Spinach and toss until it has wilted

  • Season with the Oregano,paprika salt and pepper to taste

  • Take a casserole/tart pan or any equivalent oven proof dish and butter the base and sides

  • Add the cooked ingredients into the dish.

  • Add your beaten eggs and pour into the dish to cover the cooked ingredients

  • Add your grated cheddar cheese on top and bake in the oven for about 25 – 30 minutes

  • You’ll know the frittata is cooked if you poke the center with a knife and the egg has completely set.
