I love potato latkes for brunch and here's an alternative by using sweet potato

What You'll Need - Makes 4-6 Latkes

  • 1 Large Orange Sweet Potato
  • 1/2 Red Onion
  • 2 Garlic Cloves
  • 1 Tsp Dry Oregano
  • 1/2 Tsp Smoked Paprika
  • 2 Eggs (If you're large of extra large eggs, start by adding one egg and adjust according to how well the mixture holds)
  • 2 Tbs All Purpose Flour (Also gradually)
  • Salt & Pepper
  • Cooking & Butter for frying

Prep - 15 Minutes

  • Peel and grate the sweet potato
  • Rinse under cold water until the water from the potatoes runs clear
  • Squeeze out excess water
  • Season with oregano, paprika, salt and pepper
  • Finely dice onion and add to the sweet potato
  • Break one egg into the mixture and add one tablespoon of flour to start off with and combine
  • The mixture should just stick together so that when you are frying the sweet potato strands cook and stick to each other. Adding too much egg and flour turns it into a dough-like consistency.
  • Depending on the size of your potato, you might need more than one egg.

Let's Get Cooking - 10 Minutes

  • Heat oil and butter (about a tablespoon) in a large pan. Medium Heat (4 on 6 knob stove)
  • Place the sweet potato mix into small batches (About 2 tablespoons spread out into one layer)
  • Cook until browned then flip and cook the other side too.
  • Serve and enjoy
