I am a lover of lentils but sadly they have such a bad reputation for being tasteless.  I am so convinced i can convert anyone into loving lentils with this recipe. 

What You'll Need 

  • 1 cup uncooked brown lentils 

  • 2 cups vegetable stock 

  • 125g cherry tomatoes 

  • 1 tsp tomato paste

  • 2 cups of spinach

  • 1 onion

  • 2 tsp smoked paprika

  • 1 tsp oregano

  • 1 tsp thyme

  • Salt and pepper to taste

Prep - 5 Minutes 

  • Dice Onion 

  • Half Cherry tomatoes - You can choose to leave them whole

  • Roughly chop spinach 

Let's Get Cooking - 40 Minutes 

  • In a pot, Cook the lentils in the vegetable stock with a pinch of salt and cook according to the packet instructions. Alternatively use canned lentils that have been rinsed under cold water.

  • Once the lentils are cooked, set aside.

  • In a pan, heat 2 tablespoons of vegetable oil.

  • Add the onions, saute until cooked. 

  • Add the tomato paste and combine with the onions.

  • Add the cherry tomatoes and half a cup of water allow to cook until the tomatoes start to soften. 

  • Season with thyme, oregano, and paprika.

  • Add the lentils and the vegetable stock and bring to a simmer on medium heat for 5 minutes.

  • Add the spinach and allow it to wilt and combine with the lentils.

  • Taste for salt and pepper and season accordingly.

  • Serve and enjoy.
