Cauliflower rice is a great carb substitute. It took me a while to like cauliflower rice but i’m officially hooked.

What You’ll Need - Serves 3-4

  • 300g Cauliflower or 2 Cups Cauliflower Rice

  • 1/2 Cup Frozen Peas

  • 1/2 Cup Frozen Corn

  • 1/2 Onion

  • 2 Garlic Cloves

  • 3/4 Cups Chopped Parsley, Mint & Thyme

  • 1/4 Preserved Lemon or Juice of half a lemon

Prep - 15 Minutes

  • If you do not have already prepared cauli-rice you can grate your cauliflower using the larger side of your grater (You can also use a food processor)

  • Finely chop the garlic and onion.

Let’s Get Cooking - 10 Minutes

  • Heat oil in a large pan and add the onion and garlic. Fry until onion is cooked

  • Add the frozen peas and corn. Combine until the peas and corn are defrosted.

  • Add the cauliflower and combine. Stir to cook the cauliflower for 3-5 minutes

  • Add the herbs and lemon juice and combine. (If using preserved lemon, wash off excess salt first then finely dice the lemon and add to the rice.)

  • Season with salt and pepper to taste and serve.
