What You’ll Need

  • 1.5 Cups Cooked and salted mashed potato (mash these with a richer or push through a sieve for fluffier gnocchi)

  • 1/2 Cup All Purpose Flour (More for dusting)

  • 1 Egg

Prep - 30 Minutes

  • Place mashed potatoes into a large bowl. Break the egg into the bowl and combine gently using a fork.

  • Add the half the flour and combine in a folding motion. It’s important to be gentle with the folding as this helps create fluffy gnocchi.

  • Add more flour gradually until the dough comes together.

  • Transfer this onto a floured surface and separate the dough into four equal parts

  • Flour your hands and the surface when necessary and roll out each part into a long tube like the below.

  • They are many techniques people use to make Gnocchi look pretty. I’m not great at it but this step is not necessary. You can cook the Gnocchi just after they are cut with a knife when they look like pillows.

Let’s Get Cooking - 10 Minutes

  • Place the Gnocchi into boiling water and allow to cook. You’ll know they are ready when they float to the top. Scoop them out of the water gently

  • Serve with your favourite pasta sauce.
