Line fish is usually described as the "catch of the day" in restaurants or fisheries. It also tends to be less expensive than most fish. The fish i used for this recipe is called silvers or red line fish. This recipe works well for most fish so feel free to substitute the line fish for something else. 

What You'll Need 

  • 2 Whole Fish

  • 1 Large Thumb Size Piece Fresh Ginger

  • 2 Fresh Lemons

  • 4 Spring Onions

  • 250g Cherry Tomatoes

  • Cooking Oil

  • Salt & Pepper

Prep - 20 Mins

  • If you're getting your fish from a fishery, ask them to scale, gut and clean it for you.

  • Preheat your oven to 200 degrees grill

  • Grate the ginger using the larder side of the grater

  • Roughly chop spring onions into half

  • Place the fish onto a baking tray that’s been lined with foil.

  • Season the outside and the inside of the fish with salt and pepper and rub cooking oil onto the fish

  • Squeeze the juice of the lemons over the fish equally but don’t throw away the lemons after squeezing.

  • Place the spring onions, ginger and the lemon cases into the fish cavity.

  • Coat cherry tomatoes in cooking oil and scatter them over the fish.

  • Cover the fish with foil

Let's Get Cooking - 30 Minutes 

  • Place the fish in the foil into the oven and bake for 30 Minutes

  • Scatter some capers (optional) serve and enjoy.
