This recipe came about when I was craving Penne alla Vodka but had no Penne or Vodka in the house.

What You’ll Need - Serves 2

  • 250g Spaghetti

  • 1 Cup Dry Gin

  • 1 Onion

  • 4 Garlic Cloves

  • 200g Canned Tomatoes

  • 2 Tbs Tomato Paste

  • 2 Chilies

  • 15g Fresh Basil

  • Salt & Pepper To Taste

  • Parmesan Cheese (Optional)

Prep - 5 Minutes

  • Finely dice your onions, garlic and chilies

Let’s Get Cooking - 15 Minutes

  • Cook your pasta as per the packet instructions

  • While the pasta is cooking, heat oil in a pan and add onions, garlic and chili.

  • Fry on a medium heat until the onions are soft and cooked.

  • Add the tomato paste and allow to cook for 2 minutes

  • Add the gin and let it boil rapidly to burn off the alcohol for 3 minutes.

  • Add the tomatoes and allow to cook for a further 2 minutes

  • Season with salt and pepper to taste

  • Add the cooked pasta with 1/2 cup of the pasta water and the fresh basil (Leave a sprig or two for serving) and combine

  • Add grated Parmesan to taste and combine (Optional)

  • Serve with more basil and black pepper
