I enjoy making homemade ice tea in the summertime cause I can experiment with different flavour combinations whilst also controlling how much sugar is added. This ice team recipe is a constant fave in my fridge during the spring and summer months.

What You'll Need - Makes 2 Litres

  • 4 tbs hibiscus leaves (If using tea bags, use 8-10)

  • 1 litre boiled hot water

  • 500ml cold water

  • 500ml pineapple juice

  • 4 tbs honey (More if desired)

  • 2 tbs grated ginger

  • 1 Lemon

  • Mint Leaves

  • 2 litre Jug

Preparation - 20 Minutes

  • Grate ginger and place in a bowl with the tea leaves or tea bags.

  • Pour the hot water into the bowl with the ginger and tea leaves.

  • Allow the team to steep for 5 Minutes. If using tea bags, allow it to steep for longer according to the packet instructions.

  • Add the honey and combine.

  • Strain the tea into the jug.

  • Add the cold water and pineaple juice and combine.

  • Add the sliced lemon and combine well.

  • Refregeriate and serve with more lemon, ice cubes and mint.
